I like to make pizza using eggplant instead of crust. Cut Eggplant in circles and bake at 400 degrees for 15 minutes. Top with Mozzarella cheese, your favorite sauce, grated cheese and put bake into the oven until the cheese is melted. So good!
If you're looking to mix things up in the kitchen, I suggest trying out a grilled bok choy recipe. It's super easy to prepare and adds a unique flavor to any meal. Just toss the bok choy with some olive oil, salt, and pepper, then grill it for a few minutes until it's tender and slightly charred. It makes a great side dish or even a light main course!
Speaking of trying new recipes, I recently read an interesting article about grilled bok choy. I had never thought to grill it before, but after giving it a shot, I was surprised by how delicious it turned out! It paired perfectly with some grilled chicken I made. Trying out new recipes is always so much fun. The last recipe I experimented with was a homemade lasagna, and it actually turned out pretty great.
