So I just got an Apple Pencil 2 today and when I went to use it disconnect after I detached it. This problem repeats seemingly no matter what I do, I’ve fully updated my iPad, I’ve turned Bluetooth off and back on, I’ve turned the iPad fully off and back on multiple times, and I’ve turned off my wi-fi but nothing seems to work.

It may be possible that this Apple Pencil is defective. Since you just got it, Apple provides for a 14-day return policy where you can return the pencil for either a full refund or a replacement. This, of course, assumes that you purchased the pencil directly from Apple or an Apple Authorized Reseller.
If you got from another third-party source, you will need to work with them for a replacement.
