If I install Windows 10 using the built-in Boot Camp Assistant utility, will Mac OS be deleted due to disk partitioning?
P.S. In general, when creating a backup copy, does Time Machine save files and Mac OS itself, or only files?

Time Machine only backs up the "/Users" folder and system settings (and I believe the third party software) since macOS 10.15+ is now on a read-only volume.....macOS 11.x+ is also on a signed & sealed volume that cannot be modified at all.
