How do I stop my Apple Watch Ultra wayfinder watchface from turning red???

My Apple Watch Ultra watchface (Wayfinder) turns red by itself over and over again, no matter how many times I change it back. It even does that during daylight hours. I tap it to bring up the watchface selection and switch it back, and the next time I look, it has turned red again.

A reply I got the last time I asked this question said to tap edit and swipe to night mode, but there isn't any such option, just Style, Bezel, Color and Complications. Where do I find Night Mode and Auto? They aren't where the instructions I was given say they are.

I looked in the support topics for watchOS 9 and found these instructions for Wayfinder: "To turn off Night Mode, turn the Digital Crown down." What does that mean? How do I do that? I tried switching the orientation of the watch hoping that it was just the light sensor being covered by my cuff, as someone else suggested, but that didn't work either, and it's awkward to work the buttons in that orientation anyway.

I want to turn it off entirely, including at night. I think the idea it somehow would affect my night vision is ridiculous. I live in an wooded area that is so dark at night that I often have to use a flashlight to see where I'm going, and have never had the light from the watchface affect my night vision at all. My car dashboard and/or the flashlight, not to mention my own and other cars' headlights when I'm driving, are far brighter. Working in a darkroom or stargazing are the only times I could see this being useful, the first being largely obsolete and the second something most people do rarely if at all. How someone got the idea this should be automatic for everyone is had to fathom.
