Remove contacts from Apple Watch, only keeping favorites

Hello, I have an Apple Watch 10 and an iPhone 13. I use iPhones since 2008 so have a lot of old contacts and contact lists that are all on iCloud. On my Apple Watch I do not want to see those old ones but only my favorites. How do I do this? Obviously it is not an option to delete all my contacts from my phone/icloud also not to remove manually anything from the Apple Watch. Thank you for your help.
