Generalize integration tests to change use of KafkaConsumer to Consumer

For the consumer threading refactor project, we're introducing a new implementation of the Consumer interface. However, most of the instances in the integration tests specifically use the concrete implementation KafkaConsumer. This task is to generalize those uses where possible to use the Consumer interface.
