Standardization of hygiene requirements relating to the construction and operation of commercial warewashing machines. Specification of requirements for visual and hygienic results of the articles treated in the warewashing machines. This includes guidelines for their hygienic and proper operation and for care and maintenance of the machinery as well as methods for testing hygienic operation. Commercial warewashing machines are defined as appliances used in a professional environment for cleaning washware that is used in contact with food. Domestic dishwashers, washer disinfectors for the treatment of medical devices and machines for industrial use are excluded from the scope.
