Saint-Martin - St-Martin
In Ajoie, a region north of the canton of Jura in Switzerland, an ancient tradition is perpetuated every year on the second Sunday after All Saints' Day (mid-November): the feast of Saint-Martin. It's a feast that celebrates the end of work in the fields, and the many dishes are essentially based on pig. Hence the pantagruesome Saint-Martin menu. It consists of the following dishes:

• le bouillon aux petits légumes (sometimes accompanied by a slice of bouilli, but in this case, after the boudin),
• the jelly (a kind of aspic with meat)
• black pudding with apple compote, red root salad and Rösti
.
• grilled meats, atriaux and roast accompanied by rösti,
• roast, usually with a green salad
• sauerkraut garnished with ham, fresh pork, Ajoie smoked sausage and accompanied by potatoes,
• damassine brandy (optional)
• the crème brûlée,
• le totché, a thick cream cake, rather salty,
• les chtriflattes, a kind of snail-shaped doughnut eaten with vanilla cream
• tradition also allows for a small glass of damassine brandy in the middle of the meal, before sauerkraut.
