In 2020, Hyogo was the leading prefecture in the production of rice used in sake brewing in Japan, with more than 21 thousand tons. Among the sake rice cultivated in Hyogo, Yamada Nishiki was the main variety, which is commonly used for high-grade sake. Niigata Prefecture followed in second place, with productions exceeding ten thousand tons.
